ROSCA DE REYES

Con motivo del día de reyes una tradición igual de arraigada que la navidad en México se cocina una receta de pan llamada, ROSCA DE REYES, la rosca es un pan en forma de dona gigante que se adorna con fruta seca y algunos dulces típicos de México dentro de la cual se coloca un "muñequito" que representa al niño Jesús (esta tradición tiene que ver con el nacimiento de Jesucristo) y a quien le toque dentro de su pedazo de rosca tiene que traer los tamales el día 2 de febrero, el día de la candelaria (realmente conozco la tradición pero no su significado profundo) en fin, pese al origen religioso de este suceso el pan de la rosca es delicioso ya que tiene un toque cítrico que lo hace muy sabroso, por lo tanto eh decidido publicarles la receta de este típico pan Mexicano para que aunque no celebren este hecho lo preparen en casa.

Ingredientes para pie de levadura:
60 gramos de levadura fresca.
500 mililitros de leche o agua tibia.
1 kilo de harina.

Ingredientes para la masa:
600 gramos de azúcar granulada.
14 piezas de huevo.
15 gramos de sal yodatada.
2 kilos de harina.
1 kilo de mantequilla.
Rayadura de naranja al gusto o canela molida.
Frutas como higo y acitrón al gusto.
6 muñequitos (dependiendo del tamaño de la rosca)
5 huevos.

Preparación:
Se pone en la batidora la mantequilla, la sal y el azúcar y cuando ya está cremosa, se agregan los huevos de uno en uno, también la harina y por último se incorpora el pie de la levadura (la pasta anteriormene preparada), la rayadura de naranja, se deja batir durante 10 minutos hasta que despegue la masa.

Luego se saca de la batidora y se deja reposar durante dos horas. Se forma la rosca en una charola, por la parte de abajo se colocan los muñequitos de plástico al gusto. Se adorna con acitrón y frutas cristalizadas al gusto.

Se barniza con huevo y si se desea, puede espolvorearla con azúcar. Se hornea a 180 grados centígrados, durante 15 ó 20 minutos.

Bueno espero puedan darse el tiempo por lo menos de disfrutar de este rico manjar panadero.. un saludo y Feliz Año, Cambio y Fuera...
